Lambic beers are incredibly distinctive, and rooted in history. They are fermented by spontaneous fermentation – natural wild yeasts enter the sweetened wort from the atmosphere, and fermentation takes place in nature’s own time. They are then aged in oak - for up to three years – and blended to give different lambic styles. Sour flavours are predominant – though these beers are just so incredibly (and deliciously) complex. Timmermans is one of a small number of authentic lambic brewers, leading the reinvigoration of this style by brewing a range of lambic style beers in Brussels. Their range of lambic beers and lambic fruit beers are second to none.
